A delicacy that dates back to Roman times, Lancashire's pudding makers guard their secret recipes closely. Competition is fierce and awards for pudding making highly prized. RS Ireland's The Real Black Pudding Company, a family run business based in Rossendale, prides itself on the number of awards it has landed. It makes its puddings using traditional methods and a recipe dating back to 1879 - and even has a veggie version. Black Pudding can be found on the menus of many of Lancashire's fine restaurants often as a special starter - and on the plate of any self-respecting British breakfast.
