Food and Drink > Lancashire Chef Profiles > Chris Irwin -executive chef at The Bayley Arms & Shireburn Arms
Chris came into the kitchen full time only ten years ago, after a career in all areas of food service and operations. This invaluable experience, understanding what customers really do want has enabled him to create the menus where it's really hard to choose what to select, everything is so tempting.
He uses the very best of local produce, for example prime Bowland beef, which he uses to create the sensational Bayley steak Pudding.
His daily blackboard specials, his Pie of the day, curry of the day, and Roast of the day, give a real honesty to his food, which is cooked just as it should be, and pays tribute to the English heritage of the area, Stoneyhurst College and Tolkein.
Rarely do you find such well cooked core dishes daily, amidst a tempting a la carte - Puddings finish the experience and Chris's real signature is his crème brulee, which he changes with the seasons, his summer favourite is mixed berry, but again English classic puddings, apple and sultana crumble with custard and warm Bakewell tart with clotted cream, make this decision as difficult as selecting the main course.
The Bayley Arms is a traditional English Country Inn, and Chris's menus are at the heart of the Inn. Children are also extremely well catered for with real food freshly prepared.
