My qualifications include NVQ level two and three in catering and hospitality. Next year HNC in hospitality management, all studied at Blackburn college. I have also won the award for the most outstanding level two and three apprentice each year.

My favorite dish has to be, Roast Beef (sirloin) and Yorkshire pudding. Why? Because it is one of those dishes that are so easy to get wrong, but when done perfectly it never disappoints. Making it a timeless classic.

My favorite ingredient at this time of year is Asparagus, because it is so versatile. It is supplied by our local reputable supplier Thomas Moss, and grown on the nearby farms.

In my spare time and with living on a dairy farm, I mainly help my family, which includes getting up at five to milk the cows! I am also quite active; I love cycling, swimming and walking. I have done my bronze, silver and Gold Duke of Edinburgh awards. I am also involved in my local parish church, helping run a youth prayer group, and being a member of the council.
