Greens Bistro is a family run bistro that opened 8 years ago in 1999. It is named Greens as we have recycled all we can since day one, long before it became trendy. Paul Webster does the cooking and his Swedish wife Anna looks after the front of house. It is a small relaxed bistro down a back alley that's specialises in local fresh produce with an ever changing menu, depending on what is in season.
Paul comes from St Annes and trained for 3 years at Bispham College before moving to London to work in several Michelin stared restaurants. He then joined the QE11 as sous chef, before working in Bermuda, Canada, Sweden and Australia. Then back to London to work as Executive chef of several restaurants before returning home to open Greens Bistro. Greens gained 2 AA rosettes in its first year and still have 1; it is listed in lots of national restaurant guide and has a loyal local following.
