What you need
Four large fresh eggs
200 gms Lancashire cheese
50 gms breadcrumbs
Pinch of pepper
What to do
Grate the cheese and place half in a medium sized casserole dish. Then break the eggs and place on the bed of grated cheese and cover with the remaining grated cheese. Add the pepper to the breadcrumbs and sprinkle over the top of the cheese.
Preheat your oven to 180c and place the dish inside to cook for twenty minutes.
The cheese will melt and the eggs will be perfectly cooked.
Serve with a salad made up of sliced tomatoes.
