Chef-patron Mark Birchall was born in Chorley, Lancashire where he trained at Runshaw College.
Before establishing Moor Hall he was Executive Chef of 2 Michelin Star L’Enclume in Cumbria and won the Roux Scholarship in 2011, the premier competition for chefs in the UK. He also worked at El Celler de Can Roca, Girona, a 3 Michelin Star restaurant owned by the Roca Brothers, twice voted the world’s best restaurant.
Mark’s menus showcase his own style of modern British cuisine, wherever possible using produce grown on Moor Hall’s 5 acre site or from local suppliers. Moor Hall opened in 2017 and within 6 months was awarded a Michelin Star. Later that year The Barn at Moor Hall, Mark’s casual dining restaurant and bar, also opened its doors.
In October 2018, just a year after receiving their first Michelin Star, Moor Hall was awarded a second Michelin star.
Moor Hall offers 7 luxurious guest bedrooms; each unique, with either views of the lake or gardens, allowing guests the experience of one of the county’s most desirable gourmet breaks.
In 2019 Mark Birchall was named a Taste Lancashire Ambassador, in recognition of his culinary excellence and support of the county's Taste Lancashire activities, that champion Lancashire food and drink nationally and internationally.
